Four Courses of Reading

It’s been a glorious weekend of scorching hot summer. Monday morning found us wilted and tired. The combination of heat and humidity is like being hit in the face with a warm brick wrapped in a wet towel. There is little a sensitive person can do but find a pleasant watering hole and wait for things to cool down.

Kitchen Curatorial: June 23, 2015

When I first set out to do this curatorial piece, I arbitrarily chose Monday as the day I would publish. Here I am only a couple weeks in and I am already off schedule. Such is life. It’s been a busy week with lots of projects getting done. I’ve not had much time for cooking or writing, but I did spend a couple of nice days camping along a river in Montana. I spent some time there thinking about the “glory” of camping food. S’mores, somehow managed to work themselves to the top my list of foods eaten while camping. We made s’mores on Friday night which somehow were tastier than any I remember eating.

Corn on the cob is something few people can pass up. In America, it’s a classic summer staple served with butter and salt. This recipe, one of three inspired by Pok Pok in Portland, OR, is a great way to prepare this American favorite with a wonderful Thai twist.

Muu Sateh – Thai Pork Satay

This is another simplified version of a recipe from Pok Pok is Portland. This one, pork satay, is delicious accompanied with rice, salad, corn or other dishes. It is typically served with a peanut sauce (absent from this version) but is sufficiently flavorful to be quite good without additional sauces.

This is a modified recipe based on Andy Ricker’s Kai Yaang from Pok Pok. This recipe is one of three that accompany the post Portland, A Travelogue with Food. The other recipes are Muu Sateh — Pork Satay and Khao Phot Ping — Whole-Ear Grilled Corn with Salty Coconut Cream. They are all derived from recipes in Ricker’s amazing book Pok Pok.

Portland, a travelogue with food

Portland, OR has gotten a lot of attention lately. Perhaps it’s a Portlandia thing. I’m not sure. Clearly, Portlandia wouldn’t be worth watching if there wasn’t something interesting happening in Portland. It’s definitely the hipster capital of the West coast, but there’s a great deal more to the city. Beautiful gardens, great restaurants, an awesome independent bookstore, and a wonderfully diverse bunch of seemingly happy people who make it a great place to visit and explore.

Well, yes. We have. And, to be quite frank, we’re pleased. Here are some important reasons why…

We have been regular food blog readers for as long as blogs have existed. Over the last few years we have come to see food blogs as a unique realm in the blogosphere where some of the most interesting and enjoyable (from a reader’s perspective) writing is being done. There is a wonderful community of foodie writers out there who have been working diligently to ensure readers are never lacking for great reading, inspiring recipes, beautiful food photography, and more.
